In the rich volcanic soils of the Ceocafen region, these coffee beans are high-grown so that the natural cloud cover protects them from the harsh rays of the sun. The pure Mexican Altura Tollan coffee beans thrive due to a microclimate effect. Using ancient cultivation methods, the local farmers encourage slow maturity in the coffee cherries to ensure that the flavors and inherent oils of the beans develop as nature intended.
