Origin And History

Ethiopia is the birthplace of coffee back in 850 AD. Kaldi was a young goat herder who saw the liveliness in his goats after consuming some coffee beans. After discovering he tried to give it a try, and in no time, the world was sipping coffee. Yirgacheffe is a region located in Sidama, a Southern Ethiopia region where the single origin coffee beans thrive. The coffee plant is known to grow naturally, attributed to high elevations, healthy soils, and thick vegetation. Ethiopia boasts of a tropical and warm climate with moderate dry and wet seasons.

Due to the ideal climate in this country, the Yirgacheffe coffee farmers harvest the single origin coffee beans without using any agricultural chemicals and naturally processed beans. The right time for harvesting is from October to December. If you need organic and green coffee, Yirgacheffe is an excellent choice.

Ethiopia's main export is Yirgacheffe coffee. In 2008 the Ethiopian government started the fair trade of coffee. It is one leading single origin coffee producer in Africa. And most of the citizens in this country work as Ethiopian Yirgacheffe coffee farmers. Thanks to fair trade, the farmers get the compensation they deserve and in turn produce the best single origin coffee. From simple lattes to the strong french press, you can make your favorite cup of coffee using Ethiopian beans.

Natural Vs. Wet Processing

These single origin coffee gourmet coffee beans can be processed naturally or washed. But we will look at both processes in detail below.

Natural Processing

In this process, the freshly picked gourmet coffee beans are taken and dried naturally under the sun. It is the most common and traditional way used in creating coffee. Ethiopians would pick the coffee beans in the wee hours and dry them in the afternoon. Naturally dried coffee beans are known to have a heavy fruit and wine flavor. Also, you may experience a taste of peach, lime, grape, and cherry. Thanks to this, these naturally processed beans have an earthy taste. If you fail to dry the beans well, your cup of coffee bean may be too brittle or have a sour taste.

Wet Processing

The wet processing mill was introduced first in Ethiopia in the 1970s. Yirgacheffe was the first place to have a wet processing mill to produce naturally processed beans. In this process, the coffee beans are washed thoroughly and left in a rotating bed for two to three days. The process is known to remove the Yirgacheffe traditional taste and replacing it with a new lighter taste.

Mike is a great representative of this company and the Ethiopian Yirgacheffe coffee we received is outstanding. I complained to Mike and requested a refund because it had been ten days and no coffee and he refunded the money and said I also should try the coffee when it arrived.
